Week 2 Marathon Training + Running Fuel

Yesterday officially wrapped up week 2 of my marathon training. I was so happy that we had great weather in upstate New York for January! I was able to run mostly outside.

Monday- 3.1 Miles on the treadmill
Tuesday- 6.3 Miles on the treadmill
Wednesday- 6.1 Miles outside
Thursday- 5.5 Miles outside
Friday-Rest Day
Saturday- 7.0 Miles outside
Sunday- 4.2 Miles outside

On Wednesday I was able to run with Adam and Porter in the morning before work. It is hard getting up so early, but knowing you can have a family run AND get your workout completed before work is very motivating for me! When I wait to run after work, I’m more likely to find excuses throughout the day not to work out.

About 3 miles into our run, I tripped and fell. I scraped up my hand and both knees. Luckily, I was wearing pants, two layers of long sleeve shirts and gloves so my skin was mostly protected. The areas that hit the ground stung for about ten minutes after. I still managed to make it another 3.1 miles. I felt so good for not giving up! When I got home I made sure to clean the cuts well.

On Thursday, my right knee that got the worse of it was pretty sore to walk and run on. It was a tiny bit swollen. I really wanted to keep it moving and not let it get stiff. I ran a lot slower that morning.

Friday was my rest day. However, I walked on the treadmill in the morning and I took Porter for a walk after work. It was a pretty relaxing day- workout wise. It’s good to take rest days, although, sometimes I get into the groove and don’t want to.

Saturday, we went to the Erie Canal for our run! It was a beautiful day. It got up to 58 degrees! I could have ran all day! But we had other things we wanted to do, so we capped it at 7 miles.

Last week I added sit-ups to my morning routine. I did 45 regular crunches, and 45 side crunches on each side. My stomach felt it by mid-week! On Friday, Porter wanted to help me with my sit-ups. He’s too cute!

All week I was loving eating oatmeal for breakfast! This bowl has oatmeal, Chocolate P2B, chia seeds, about a tablespoon of maple syrup, 1/4 C unsweetened vanilla coconut milk and bananas.

We roasted a pumpkin earlier in the week, so some of my oatmeal had, pumpkin, chia seeds, cinnamon, about a tablespoon of maple syrup, and 1/4 C unsweetened vanilla coconut milk. Both were delicious and very filling! What do you like to eat after a hard workout?

Beginning of My Birthday Week

It is tradition in our house to have a birthday week. The week and starts and ends in any 7 day period that surrounds your birthday. The birthday person gets to choose when they want their birthday week to start and end. This year, I chose for my birthday week to start on Saturday 1/14 and end the following Saturday. During your birthday week the other person does things to make the week extra special, you don’t have to cook or doing any cleaning if you don’t want to!

Friday we had date night! We went to the mall and did a little looking around and some shopping. Then we had dinner at Gordon Biersch. I had a delicious Grapefruit Moscow Mule. It was super refreshing. We split an order of the garlic fries. Those are something everyone around you must eat if you’re going to have some. Otherwise you will be the only person reeking of garlic! Then I had the California Cobb Flatbread. I took most of the flatbread home because I was so full from the fries!

We went to Revolutions for some bowling! It was our first time there and I look forward to going again! Besides bowling, they have darts, ping pong and shuffle board. They have lots of projectors, projecting different sports, and a couple bars. The place is HUGE! I’m excited to go again sometime! Adam won all three games we played, but I got better as we played!

Saturday we did a lot of house stuff. We did laundry, cleaned, started fixing up the closet in the guest bedroom, and went grocery shopping and to Home Depot to get additional supplies needed to finish the project. I also ran and did some reading. Porter and I ran 6 miles outside. He loves running in this weather!

Sunday morning I started looking at different events that are hosting century bike events around NY and the surrounding states. Right now we are considering doing either the NYC Century or the Harpoon Point to Point Ride. Both look like great events! This will be our first time doing a 100 road bike event.

Adam and Porter joined me for my run on Sunday outside. We ran 7.3 miles. The sun was out and shinning and some points during the run, but the wind was cold!

After we got cleaned up and had lunch we went to Stout Beard Brewery. They recently re-did their tap room so we wanted to check it out! It looked really nice! They had five beers on tap, so we split a flight. My favorite was their Black Ben Wheat.

Then we went downtown to ice skate. I was nervous because I have not gone ice skating in a few years. After about 15 minutes I got the hang of it. Until I got more comfortable, it gave me a great excuse to hold Adam’s hand while we skated. 😉 Once it got a little bit darker, the Christmas tree and surrounding Christmas lights looked beautiful surrounding the ice. We skated for over an hour. Then it was time to go home and warm up!

Adam baked a chicken we had. We had the chicken for dinner last night and then the rest of the chicken will be used later in the week to make Coconut Curry Chicken Noodle Soup. I haven’t had this recipe yet, but it looks delicious and will be perfect to warm us up on these cold winter nights!

This morning Porter and I walked about 3 miles while I drank my coffee and listened to a podcast. It was very relaxing and a great way to wake up. Once we got back I jumped on the treadmill for 3.1 miles. Monday is usually a rest day for my training, but I think I want to take a rest day later in the week when my schedule gets busier, so I ran this morning. We are going into week 2 of marathon training.

Friday the 13th

Hope you all had a great week and are ready for the weekend! Hopefully you didn’t incur any bad luck on this Friday the 13th!

Any exciting plans for the weekend? Tonight Adam and I are having a date night, I have a run each day planned, painting a closet and building shelves for the closet to make it more useable space and relaxing of course!

This week I managed to run twice outside! I was super excited to be able to run outside and not freeze! Here was my running week:

Monday- Rest and recover day
Tuesday –  6.1 Miles-Treadmill; 11:20 average pace
Wednesday- 4.5 Miles-Treadmill; 11:32 average pace
Thursday- 6.3 Miles-Outside; 9:39 average pace
Friday-4.5 Miles-Outside; 9:32 average pace

I run much faster outside and you get the variation of running up and down hills which is better training for me. Do you run faster on a treadmill or outside? I always thought it would be the opposite, that it would be easier to run on a treadmill because there are no obstacles, no hills that can be challenging and no sharp turns to slow you down.

On Thursday, I ran with Adam and Porter. So that time included Porter’s real and fake bathroom stops. Sometimes he just likes to stop and smell the world around him! The temperature was amazing for running on Thursday! It was about 48 degrees when we woke up! I’m glad we took advantage of the nice weather.

Friday the temperature had dropped and was about 33 degrees when I woke up. But it felt so good on Thursday, I decided to layer up and go for it! For Christmas, our family got us these awesome hats to wear when running in the cold and darkness! It kept me nice and warm this morning and I felt good that it made me more visible to those around me. It’s important to make sure you are easily seen! We also wear these reflective vests when running and walking the dog in the early morning.

Cold Season Recovery

Hello hello hello! I hope you all had a good weekend and beginning of the week! My house has officially been punched in the face by the cold/flu season. Adam slowly got it last week and his symptoms got worse as we went into the weekend. Friday and Saturday was all about resting and getting better for him. I thought I was avoiding it completely, until I woke up Sunday feeling not-so-great. Yesterday I felt awful all day and today I am finally starting to feel a bit better. I feel really dry now though. Trying to push as many fluids in as possible, making sure to take my vitamins and Airborne Immune Support Supplement. Have you gotten a cold this season? How did you get rid of it? I was suppose to give blood today, but had to cancel because I wasn’t feeling good. I rescheduled to give in a couple weeks. Did you know that January is National Blood Donor Month?

On Saturday I got a great run in on the treadmill. It felt good not to have any plans and be able to spend as much time as I wanted doing a work out. During the week I usually workout in the morning, so I have to stop at a certain time in order to get ready for work. I ran 6.3 miles and then did some sit-ups, squats, and push ups.

After my run, we made a yummy brunch. I had 2 eggs over easy, an English muffin, ham and butternut squash. Delicious!

On Sunday we went on a walk at the Erie Canal. It was lightly snowing and everything looked so beautiful outside! We walked about 5 miles. Porter loved smelling the tracks of people and animals who walked that path before us.

When we got back we decided to try to sweat out some of our cold! Adam ran on the treadmill while I rowed. We watched Top Chef while we worked out. That show can be pretty addicting!

Today I started marathon training! This morning I did 6 miles on the treadmill before work. It was hard to breath due to my cold, but felt good to get a sweat on. I had the chills this morning, so getting heated up was nice. I have run out of shows that I’m interested in on Hulu and Netflix. I’m kind of a picky show chooser. I watched 1.5 shows of Nashville this morning. It was okay, but I could be easily swayed to something else. Any recommendations?

Enchilada Stuffed Spaghetti Squash

If you know me, you know I have a true love for food! Some days I get my motivation to workout from thinking about what I want to eat that day. The more I exercise, the less guilty I feel when I treat myself. Life is all about balance.

Last night I made a fall/winter favorite in our house enchilada stuffed spaghetti squash. Here is the recipe I use, of course you can change any ingredients you may like.

Enchilada Stuffed Spaghetti Squash

-2 Chicken Breasts           -1 Spaghetti Squash
-Olive Oil                           -Cayenne Pepper
-Hot Chili Powder            -Garlic Powder
-Black Pepper                   -1 Can Black Beans
-1 Cup Cooked Quinoa    -1 Cup Frozen Corn
-1 Can Red Enchilada Sauce   -1/2 of a Diced Onion
-1 Cup Salsa                      – Shredded Monterey Jack Cheese

  • Cut a spaghetti squash and cut it in half. Scrape out the seeds and rub a little olive oil on the inside. I put a little cayenne on the inside of mine because I like spicy food, but it’s optional. Put the squash in the oven at 350 degrees for about 50 minutes. When it’s done it should be soft on the inside.
  • Season two chicken breasts. I used a cayenne olive oil, cayenne pepper, hot chili powder, garlic powder, black pepper. Cook at 350 degrees for about 25 minutes.
  • To make the filing mix the 1 can of black beans, 1 cup of cooked quinoa, 1 cup frozen corn, 1 can enchilada sauce, 1/2 of a diced onion, 1 cup salsa.
  • When the chicken breasts are cooked, chop them up and add the chicken to the filling mixture.
  • Put the filling inside of the spaghetti squash.
  • Top with Monterey Jack shredded cheese.
  • Bake for about 10 minutes. Turn on the broiler and leave in for about 1-2 more minutes.
  • Serve!


This meal usually lasts us for 2 nights. The leftovers are just as good! We have done this recipe with chicken, ground turkey and ground beef before. You can use different cheese or beans if you like, add cilantro or peppers, skies the limit! This makes for a delicious, filling and healthy meal!

Sorry, I was so excited to eat it I forgot to take a picture of the final product. 🙂 It was yummy though!

Finding motivation

Hope you are all having a good week!

As we continue through the week and head towards the weekend I keep thinking of my marathon training that we’re starting on Monday. Mondays are actually rest days according to the schedule, so it will really start on Tuesday. I am hoping that we have warmer weather and can start running outside for most of the runs. Yesterday the wind was crazy and I wanted no part in being outside! It was garbage/recycling day in our neighborhood and when I got home from work there were garbage cans and recycling bins all over the road and in people’s yards.

On New Years Day, Adam and I had an awesome run outside! The sun was shining and we completed 8 miles together. Porter loved getting exercise with us! He is so cute, sometimes he will run right next to us and look up at us from time to time. I’m not sure if he’s checking on how we’re doing and thanking us for getting him out. I’ll go with both?

Before our run, I really didn’t feel like running on the treadmill for another day. I talked Adam into doing a “short run” outside and then if we didn’t want to continue we could finish inside. Whenever I don’t have the motivation to exercise I always tell myself that I will just do it for a shortened period of time and then if I’m not into it I will stop. The majority of the time I continue to get my full workout in rather than stopping short. I just know will feel better if I do something rather than regretting it later.

I try to change up my workouts to give myself something different to look forward to and stop myself from getting bored. In the winter in addition to running, I row and find YouTube workouts that I like. I usually do Jillian Michaels workouts on YouTube, but I have done different Zumba and yoga videos.

What are things you enjoy to stay active throughout the winter months?

New Year New Goals!

As we all begin this new year, people begin to think of how they can improve their lives to make 2017 the best year yet. Some people like to call these new ideas resolutions and some like to call them goals. Whatever you call it, I hope you not only decide on what you want to do but how you’re going to implement those ideas into your everyday life and stick with it! I think it’s important not to make goals or resolutions too hard that it takes you too far out of your comfort zone. You may feel ambitious at the beginning of the year and fall short of reaching your goals which leads to feeling disappointed. Remember, it’s much easier to talk about doing something than actually doing it. However, I do believe that talking about your goals and sharing them with your friends and family makes you more likely to complete your objective. Continuously talking about it makes you continue to feel motivated to do it. If you’ve told everyone your going to do it you don’t want to go back and tell them you didn’t.

The goals I would like to accomplish this year are:

  • Complete a century ride
    Ever since Adam and I did a fundraiser road bike challenge I have wanted to complete a century ride. We had the option to do it during that challenge, but it was my first summer riding and I didn’t know if I would like road biking or how challenging 100 miles would be. Now that I know I enjoy road biking and have completed 75 miles in one day, I feel comfortable making the step up to 100 miles in one day.
  • Walk/hike one new trail every month
    There are so many great trails throughout New York State and I have only walked/hiked a small amount of them. It is so much fun to explore new areas. If you have any hiking trails you have loved in New York, let me know I would love some recommendations! I have a few trails on my bucket list for this year.
  • Try one new restaurant per month
    I’m stealing this goal from some of our friends who had this as a goal last year, I just love the idea of it! Adam and I don’t often eat out and when we do it’s a lot of fun to try a new place. The Syracuse area has a ton of restaurants we’ve never been to. We’ll take turns each month picking where to go.

That’s it! I didn’t want to have too many goals that I would forget them. I also wanted to make sure they were fun and enjoyable. When Adam and I talked about our goals the other day we wrote them down and stuck it on the fridge so we can see throughout the year.

On Monday we walked a new trail. We took Porter for a walk downtown and did the Syracuse Creekwalk. It’s not a hiking trail per say, but it was a really nice trail through the city. We walked just under 3 miles each way. Before we started the walk we stopped at Freedom of Espresso to get some coffee to keep us warm as we walked. I really enjoyed the trail. Along the trail they have some signs to tell you about the history of the area that you are walking by. It was chilly, so we kept walking to keep warm. In the summer I would like to do the walk again and read the information on the signs and take our time along the trail. They even have QR codes you can scan with your phone and it will pull up a video to get the information that way. I thought that was really neat!

So I already have January’s trail completed! Now what new restaurant should we try first? So many options!

I hope that you all had a very happy and safe new years eve last night with your friends and loved ones! I had a very relaxing and adventurous day! I woke up early to enjoy a nice quiet cup of coffee and catch up on email and look around on the internet. We got a little bit of snow over night, so Porter and I went outside to shovel before going for a walk. It was so peaceful out! We ran into Porter’s favorite neighbor while he was walking his dog, Brooklyn. Porter is very much a people person and loves seeing people, but we have one neighbor he gets particularly excited about seeing. I think it has something to do with all of the treats he gets when we run into him. 🙂

Once we got back I had some cereal and jumped on the treadmill for 5.3 miles. I want to try to run outside even when it’s chilly to get more use to it. When we start marathon training, it will take too long for Adam and I do separately run on the treadmill for some of the longer runs. So it will be important to run outside. However, it was pretty slippery. There was lots of snow on the roads and some ice patches. Better to be safe than sorry, so inside it was! I watched Whiskey Tango Foxtrot while I ran. I love Tina Fey!

Adam and I went out to Highland Forest for a horse drawn sleigh ride. They are doing sleigh rides every Saturday and Sunday thru February as long as there’s snow. It’s first come first serve and when we got there at 2:30 they were already booked for the day. We had brought coffee with us, so we just enjoyed it while looking at the amazing views.

Then we drove to Chittenango Falls to look at the falls and take a short hike. We had planned to hike the Gorge Trail which goes down along the falls and has a bridge that gives an amazing view of the falls, but we found it was closed due to icy conditions.

We found a couple other trails that we didn’t know existed. It was a lot of fun exploring these new trails. We wouldn’t have even found them, had it not been for the tracks we found in the snow. It was so peaceful out. The freshly fallen snow was beautiful. We could hear a few birds chirping and enjoyed listening to the flowing stream that wrapped around the trail we were taking. We were the only ones at the park when we started. By the end of our hike it was starting to get dark out. We were ready to get a drink at one of the local breweries and warm up from the cold!

We went to Empire Farmstead Brewery. When we got there, they were just about to give their last brewery tour of the day so we hopped on the tour to check it out! Our tour guide had a lot of great information about the history of Empire Brewery, their brew process and ways they are trying to utilize sustainable resources.

After the tour we enjoyed some of their beer! I had a sample size glass of their Deep Purple which is a pilsner base with NYS Concord grapes. I also had their Apple Harvest Ale which they made in collaboration with a local apple orchard, BEAK & SKIFF ORCHARD. They used fresh pressed cider from Empire and Honeycrisp apples. I also had a sample size glass of their roasted pumpkin ale which they brew with pumpkins from a local farm just down the road. The Deep Purple was my favorite of the night!

Next we went just around the corner to The Brewster Inn for dinner. The Brewster Inn is an elegant inn right on Cazenovia Lake. It was beautifully decorated for the holidays inside. We were seated right next to the stunning fireplace. I loved the cozy atmosphere. They were serving a select menu which offered a four course meal. All of the food was delicious and I was happily stuffed afterwards.

This is their delicious Colorado Rack of Lamb with a potato terrine & a rosemary mint chimichurri.
This was a warm bread pudding with candied cranberries and eggnog ice cream on the side.

After dinner we went home to watch the ball drop! We made it home at about 11:30, so we had just a short time to put some comfy clothes on, get the champagne ready and cuddle up on the couch.

Marathon Training 2017

This past September I ran my very first full marathon in Binghamton, NY. In May 2017 I will be running my second full marathon in Buffalo, NY. For the Binghamton Marathon, I completed a 16 week training schedule. I learned a lot about my body and the importance of properly fueling before, during and after long runs. The first 16 mile run I completed during training I felt like I had the worst hangover of my life afterwards! Not wanting to have that experience again I began to try different gummies and protein bars specifically for running. I don’t like to carry water with me when I run, so I also made sure I ran places with easily accessible drinking fountains.

Here is my 16 week training schedule from 2016. The writing in pen is what I actually completed. As you can see, some days I traded run days for rest days and rest days for run days. Sometimes I was feeling good, so I didn’t limit myself to only running the suggested mileage and instead kept going. In my new training program I will swap running days if needed and run further if I am feeling good and want to.

For the Buffalo Marathon , I am going to complete a 20 week training schedule. I will share my runs with you and how they are progressing as time goes on. Yesterday, I mapped out the training schedule which will start January 9th. I couldn’t find one training schedule I really wanted to complete, so I took a couple different schedules and meshed them together to create a schedule I was happy with. The first couple weeks won’t be that much different than my normal running, but having a schedule will keep me accountable. I wanted a training schedule that was a little more intense than my first training schedule.

I will be running the Buffalo Marathon with my husband, Adam and his cousin, Jamie Ann. Adam completed the Binghamton Marathon with me and this will be Jamie Ann’s first full marathon. I am really looking forward to training with Adam. Last summer we completed the majority of our training runs together in the morning before work. Training in the winter/spring together will be tough because a lot of the time we will be using the treadmill for our runs due to the cold and darkness.

Running in New York in the winter can be tough for sure! For Christmas 2014, my husband and I got a treadmill as our Christmas present to each other. This way we could continue to run outside even when it was snowy, rainy, or freezing outside. I go back and forth on whether or not I enjoy running on the treadmill. When I have a new show to watch, running on the treadmill can be very relaxing. Do you have a favorite show you like to watch while working out? Sometimes it is nice not to have to think of a route to run. And of course, the convenience of the fact that if you have to pee mid run you just pause the treadmill and run upstairs!

I have enjoyed reading blogs from other athletes, foodies, and adventurists for a few years now. Here is my chance to share the same enthusiasm for life with all of you wonderful people!

About 3 years ago I began my own journey of creating a healthy active life. At the time, I thought the things I was doing were going to be temporary. I had thought that as soon as I lost the weight I had set to loose, I would go back to my ways and enjoy life. Little did I know, that I would end up loving exercising, eating healthy and learning about my body. Now don’t get me wrong, I love a decadent dessert and have a major sweet tooth. But I try to balance my life with diet and exercise.

Running has become a true passion for me. Not only do I enjoy running, but I also run to spend time with my husband, Adam. He is a huge inspiration in my life. For every race I have participated in, Adam has trained and completed with me. It is a great way for us to spend time together, catch up on our days, exercise our dog, the list goes on.

I have also found a passion for road biking, rowing, hiking, Zumba and cycle classes.
